Asparagus
Asparagus was recommended as an aphrodisiac by the herbalist Culpepper. Apparently he prescribes it ‘’to be taken to stir up bodily lust’’. If this isn’t enough to make you want to indulge then maybe just the fact that today asparagus is valued as being a healthy, delicious food rich in vitamins and low in calories. For Nick and Ros Loweth at Abbey Parks, asparagus is simply addictive. What started as a hobby on one acre of land has now expanded to 30 acres of land and a thriving business as growers and wholesalers of asparagus.Top London restaurants such as The Ivy and more local restaurants such as Hambleton Hall and Nick’s in Oakham use Abbey Parks Asparagus.
Asparagus production began on silt fens at Parks Farm ten years ago. It takes three years from planting the crop to harvesting the first spears. Harvest begins mid-April and continues until Midsummer’s Day in June.
Asparagus can be prepared and served as a vegetable, starter or main course. The aim is to maintain the colour and freshness of the asparagus throughout the cooking process. Cooking asparagus in a steamer is a luxury kitchen accessory but not entirely necessary. Asparagus can be successfully cooked in a roasting pan with some olive oil or water depending on whether you want roasted or steamed.
